Sodium bicarbonate (NaHCO3), also known as baking soda or sodium hydrogenocarbonate, is a white basic mineral powder and is commonly used as an ingredient in the food market. Not a new ingredient to the industry, it is authorized and registered as a food ingredient with the reference E500ii in Europe.

The ingredient is used largely in the bakery and confectionery industries as it has several advantageous properties. For example, it can be used as leavening agent, pH buffer, and effervescent agent—more on these will be discussed here

Sodium Bicarbonate has many benefits to the human body. It promotes healthy digestive system and is a natural antacid.

 

In Food

Sodium Bicarbonate E500 is widely used as leavening agent in food such as in in pancakes, cakes, quick breads, soda bread, and other baked and fried foods.

In Beverage

Sodium Bicarbonate E500 can be used as PH regulator, leavening agents in beverage. Sodium Bicarbonate can also be used in sports drink.
